One of my favorite go-to recipes is what we call 'German Breakfast' in our house. It's basically diced potatoes, green or regular onions, and whatever veggies, seitan (we love Gardein in ours), etc. you have on hand, sauteed together in my wok. When I was young, my mother put eggs and cheese in, so feel free to do that if you eat those things, or sprinkle some Daiya on top if you're hankering for a cheesy taste. Nooch (nutritional yeast) works great too!
The spices are very simple- just some garlic powder, paprika (I use roasted, but whichever paprika you have works fine), olive oil, and salt, and that's it!
I use two large potatoes per person, diced, as this is a main dish, with a cup or so of veggies alongside. Feel free to use those frozen diced potatoes or hashbrowns- we often do this to save on time and energy. For veggies I like adding broccoli, cauliflower, carrots, corn, the list goes on and on, and the recipe is very flexible. Mushrooms taste great in here too!
Step One: Heat a tablespoon or so of olive oil in a wok or skillet. Feel free to use oil spray or a bit of water/broth if you're watching your oil intake.
Step Two: Add the green or regular onions and fry for 30 seconds or so.
Step three: Add your diced potatoes, other vegetables, and spices. Allow them to sit undisturbed for 5 minutes or so to get a nice crust on the potatoes. You may have to add more water if you go the water or broth route.
Step Three: Stir occasionally until the vegetables are cooked through all the way. Sometimes, especially if using oil, I add a bit of broth or water to help 'steam' things through.
Step Four:: If using eggs, crack them over the skillet and stir the contents until the eggs are cooked. Top with cheese or Daiya, and taste for salt. Adjust seasonings, and enjoy! This is easily customized for picky tastes, and the eggs/cheese can be added after the vegans among you take their portion from the pan. It's a great go-to, quick and easy dish, and we have it often. Have fun with the spices, play with the added veggies, and feel free to tailor this to suit your family's taste!
You can top this with almost anything- salsa, guacamole, sour cream, sriracha hot sauce, go ahead and get creative.
